How much sausage casing you need
For 6″ (15 cm) links in standard 32–35 mm hog casing, plan on about 1.9 m (7 ft) per kg of sausage mix, or 3.4 m (12 ft) per 5 lb. That includes the twists, the tied ends and a little spare.
Casing per batch (6″ / 15 cm twisted links)
| Casing | Each link | Per 1 kg mix | Per 5 lb mix |
|---|---|---|---|
| Sheep 22–24 mm | 65.2 g | 14 links · 3.2 m (11 ft) | 33 links · 6.7 m (23 ft) |
| Hog 28–32 mm | 111 g | 8 links · 2.1 m (7 ft) | 19 links · 4.2 m (14 ft) |
| Hog 32–35 mm | 138 g | 7 links · 1.9 m (7 ft) | 15 links · 3.4 m (12 ft) |
| Hog 35–38 mm | 164 g | 5 links · 1.6 m (6 ft) | 13 links · 3.1 m (11 ft) |
| Hog 38–42 mm | 197 g | 4 links · 1.4 m (5 ft) | 11 links · 2.7 m (9 ft) |
Worked out by Linkulator from the casing width and link length, allowing for twists, about 60 cm (2 ft) for the ends and 10% spare. Weights are of the finished mix: meat, fat, water and add-ins.
Tips
- Buy a little more than you need. Natural casings vary in width and some split.
- Soak salted natural casings in lukewarm water for at least 30 minutes, then flush them through.
- Leftover salted casings keep for months packed in salt in the fridge.
