Rules by country
Curing rules differ between countries, so Linkulator uses the rules for where you are. It picks them automatically from your country (it says "detected" next to Rules for), and you can change it at any time.
What changes by country
| Rules | Nitrite limit used | Default units |
|---|---|---|
| USA | 156 ppm sodium nitrite, on the meat block (USDA FSIS, comminuted products) | lb / oz |
| Ireland / EU | 80 mg/kg nitrite added, expressed as nitrite ion (about 119 ppm sodium nitrite), from October 2025 | grams |
| UK | 150 ppm sodium nitrite (the current GB figure couldn't be confirmed, so it's shown as unverified) | grams |
Anywhere else gets USA rules and lb/oz. Change Rules for or the units yourself and Linkulator remembers your choice.
Being under a limit doesn't make a recipe legally compliant on its own. If you sell sausage, follow the rules for food businesses where you are.
